“Coconut oil is my favourite ingredient at the moment, it has a wonderfully subtle flavour that goes so well with the lemon and orange zests. It also adds a lovely texture to the cake. I love mascarpone frosting as it’s not as sickly sweet as regular buttercream and tastes much more refreshing. I will be eating slices of this with chamomile and honey tea and planning my Summer holidays. ”
